Cottage Cheese Pancakes

I don't like cottage cheese... unless it's in lasagna.
I bought a container of it, probably for lasagna, and it was about to expire.
Not wanting to throw it away, and not in the mood for lasagna, I went to allrecipes.com and searched for recipes using cottage cheese as an ingredient.

They didn't really sound all that appetizing...
...mostly because they were made with cottage cheese...
but the comments from those who had made them inspired me to give them a try.

They were super easy... and they smelled really good...

...and they tasted amazing!
I've made them twice.  The first time I followed the recipe.
The second time I used oat flour and added a tablespoon of flax, a few shakes of cinnamon and a peeled and diced apple... YUM!

If you try them, let me know what you think about cottage cheese in pancakes.

Thanks for dropping by...

  1. Well who would have thunk. I don't care for cottage cheese either (except in lasagna) - I might have to give these a try ... after I buy some cottage cheese ;-)

  3. Someone else who uses cottage cheese in lasagna....Around these Utica parts, that's considered a crime! But, every once in a while I sneak it in. I never tried it in the pancakes. You make the best breakfasts!
